ROASTED WINTER VEGETABLES image

Number Of Ingredients 8

one lb. peeled carrots
one lb. peeled parsnips
one large peeled sweet potatoe
one small peeled and seeded butternut squash
3 tablsp. good olive oil
1 and a 1/2 teasp. kosher salt
1/2 teasp fresh ground pepper
2 tablsp chopped fresh flat parsley

Steps:

  • preheat oven to 425 deg. cut veggies into 1 inch cubes mix in a large bowl or bag with oil, salt and pepper place all veggies in a single layer on two sheet pans bake for 25-35 mins. turning once with a meta spatula
