Steps:
- Preheat oven to 450º. Grind together dry spices in food processor or in a mortar & pestle, and place in large mixing bowl, add other ingredients and stir until fully coated. Place in large glass baking dish and bake for at least one hour, stirring the pan every 20 minutes or so. Veggies are done when they look nice and brown and caramelized.
