Roasted Parmesan Asparagus image

Try this easy roasted asparagus recipe the next time you're looking for a side dish. Simple ingredients enhance the natural flavor of the asparagus. Sprinkling Parmesan cheese on top adds a bit of salt to the dish but also makes the asparagus nice and cheesy.

2 lb fresh asparagus (25 to 30 stalks)
olive oil
1/2 tsp salt
1/4 tsp black pepper
1/2 c grated Parmesan cheese

Steps:

  • 1. Lay asparagus in a single layer on a foil-lined cookie sheet.
  • 2. Drizzle about 2 tablespoons of olive oil on asparagus.
  • 3. Sprinkle with salt and pepper.
  • 4. Roast at 400 degrees for about 15 to 20 minutes or until tender.
  • 5. Remove from oven. Add Parmesan cheese.
  • 6. Return to oven for another couple of minutes for the cheese to melt in.
