Steps:
- Preheat oven to 350 degrees. Mix the maple syrup and oil together with the cinnamon or cardamom. Toss the rings with the maple syrup mixture and lay flat on a greased sheet pan. Season them with salt and pepper. Place in the oven and roast for 35-45 minutes. Turn them over once halfway through so that they are golden on both sides. Remove from the oven, scoop out the seeds and serve.
