Parmesan Bruschetta image

This Parmesan Bruschetta is made with diced tomatoes, garlic, balsamic vinegar, basil on baguette slices sprinkled with Parmesan cheese.

Number Of Ingredients 10

2 tablespoons olive oil (divided)
1 french baguette (sliced)
8 roma tomatoes (diced)
3 cloves garlic (minced)
6-8 fresh basil leaves (chopped)
2 tablespoons balsamic vinegar
¾ teaspoon salt
½ teaspoon pepper
½ cup Parmesan cheese (shredded)
Extra fresh basil (for garnish (optional))

Steps:

  • Preheat the oven to 450º Fahrenheit. Place baguette slices on a baking pan and brush the tops of slices with 1 tablespoon of olive oil.
  • Toast baguette slices for 5-6 minutes or until lightly browned around the edges.
  • In a bowl, mix together 1 tablespoon olive oil, diced tomatoes, garlic, basil leaves, balsamic vinegar, salt and pepper.
  • Spoon tomato mixture onto baguette slices, sprinkle with shredded Parmesan and extra basil and serve immediately. Optional: drizzle slices with a little more balsamic vinegar.
