ROASTED GARLIC GRAVY image

Yield 4 cups

Number Of Ingredients 15

2 heads garlic
3 tbsp olive oil(extra light)
1 leek quartered and washed
1 onion-medium size unpeeled and quartered
2 carrots quartered
1 parsnip quartered-use 3 if small
2 celery ribs quartered
1 bay leaf
1/2 tsp whole peppercorns
1 1/2 c dry white wine
1/3 cup soy sauce
6 cups cold water
5 tbsp unsalted butter
1/3 cup all purpose flour
4 shakes of dons lava love or other spicy season salt

Steps:

  • preheat oven to 400. cut off top of 1 garlic head & put it on a doubled sheet of heavy duty tin foil drizzle w/ 1 tbsp olive oil roll the top and sides in and crimp tightly. put it in the oven for 45 min. while its baking chop up your veggies, once all are chopped put a large pot on stove put in 2 tbsp olive oil and heat until it shimmers. add all the veggies to the pot put in 8 good sized cloves of the 2nd head of garlic do not peel the garlic cook in pot stirring occasionally until browned-about 8 minutes Stir in the wine and boil until most has evaporated add the soy sauce and water and simmer uncovered for 30 minutes. When the garlic finishes roasting open the package and drizzle the olive oil into the pan of veggies and liquid. squeeze the roasted garlic into a small bowl and mash into a paste. Strain the stock through a fine mesh sieve into a large measuring cup. if you have more than 4 cups boil to reduce if less add a bit of water. Melt the butter in a medium heavy sauce pan over medium heat add the garlic paste and the flour to the pan and stir to thicken. gradually add the four cups of stock to the pan and stir continuously with a whisk. let simmer for 3 minutes season w/ salt and pepper and the 4 shakes of don's lava love. serve immediately
