ROASTED GARLIC DRESSING image

Number Of Ingredients 8

-2 L garlic heads
2 T water
-salt
2 T evoo
4 t cider vinegar
1 T dijon mustard
1/2 t minced fresh thyme leaves
1/8 t ground black pepper

Steps:

  • 1. Adjust an oven rack to the upper-middle position and heat the oven to 400. Cut 1/2" off the top of ea. garlic head to expose the tops of the cloves. Set the garlic heads cut-side up on a small sheet of aluminum foil and sprinkle w/ the water an a pinch of salt. Gather the foil up around the garlic tightly to form a packet, place it directly on the oven rack, and roast for 45 minutes. 2. Open the top of the oil to expose the garlic and continue to roast until the garlic is soft and golden brown, about 20 minutes longer, reserving any juices in the foil packet. 3. Squeeze the garlic cloves from the skins. Process the roasted garlic, reserved garlic juices, 1/2 t salt, and the remaining ingredients together in a blender or food processor, until thick and smooth, about 1 minute. The dressing can be refrigerated for up to 4 days in a lidded jar; bring to room temperature, then shake vigorously to recombine before using.
