ROASTED CORN WITH PARMESAN BUTTER & HERBS image

Number Of Ingredients 5

6 ears of corn, husks pulled down but not removed, silks removed
1 T softened butter
2 T shredded parmesan cheese
1 T chopped fresh herbs such as basil, oregano, parsley, tarragon, and/or thyme
Kosher salt and pepper to taste

Steps:

  • Cover the corn with water and soak for 15 minutes. Meanwhile combine the remaining ingredients. Preheat over to 400 degrees. Rub the butter mixture onto each ear of corn, and pull the husks up around the ears of corn to cover. Wrap each ear in foil and place in baking pan. Roast 30 minutes, turning occasionally. (If you prefer, you can wrap the ears in foil and grill them 20 minutes, then unwrap and continue to grill an additional 5 minutes.)
