ROASTED BRUSSELS SPROUTS AND GRAPES WITH WALNUTS image

24oz brussels sprouts (8 cups) halved or quartered if large
24oz grapes (4 cups)
2 tbsp extra-virgin olive oil
4 tbsp fresh thyme
Coarse Salt and Pepper
2 tsp balsamic vinegar
1/2 cup walnuts, toasted and coarsely chopped

Steps:

  • 1) Heat Oven to 450. On baking sheet(s) toss brussels sprouts, walnuts and grapes with oil and thyme. Season with salt and pepper. Roast in oven until carmelized an tender (about 20 minutes). Leaves of brussel sprouts with get lightly browned and crispy! Yum! 2) Drizzle with Vinegar and stir
