Steps:
- Preheat oven to 450 degrees. Cut off florets and separate into large pieces. If using stalks, use a vegetable peeler or paring knife and peel outer layer of stalks, then thinly slice crosswise.
- Divide broccoli stalks (if using) and florets into separate bowls. Add half the garlic, oil and red-pepper flakes between the two. Stir then place on two cookie sheets and season with salt.
- Roast until broccoli is crisp-tender and beginning to brown, 20-25 minutes, stirring halfway through.
- If using stalks and florets, switch the two cookie sheets from one shelf to the other.
- Remove from oven and sprinkle with lemon juice. Serve hot with grated cheese.
