ROASTED ASPARAGUS WITH OLIVE VINAIGRETTE image

2 lbs asparagus trimmed
3 TBL olive oil
salt and pepper
1/2 cup chopped pitted kalamata olives
2 TBL chopped fresh flat-leaf parsley
1 TBL sherry vinegar or red wine vinegar

Steps:

  • Heat oven to 450 degrees. On a rimmed baking sheet, toss the asparagus with TBL of the oil, 1/2 tsp salt, and 1/4 tsp pepper. Roast, tossing once, until tender,8 to 12 minutes. Meanwhile in a small bowl, mix together the olives, parsley, vinegar, the remaining 2 TBL of oil, and 1/4 tsp each s & p. Spoon over asparagus.
