ROASTED ASPARAGUS AND RED PEPPERS image

1# asparagus, trimmed
1 lge red pepper, seeded and cut in 1/2" strips
1 tbs fresh lemon juice
1/2 tsp salt
1/4 tsp crushed red pepper
1 tsp grated lemon zest

Steps:

  • Preheat oven to 400 degrees. In large bowl, toss asparagus, pepper, lemon juice, evoo, salt and crushed red pepper. Toss to coat well. Arrange vegetables on baking sheet in one layer. Bake until tender, shaking the pan occasionally, about 15-18 minutes. Transfer vegetables to bowl and toss them with lemon zest. Serve.
