ROAST TURKEY WITH ZINFANDEL ORANGE GLAZE image

Glaze:
1 bottle zinfandel wine
2 cloves garlic, chopped
1 large shallot, chopped
1/4 c honey
2 t chopped fresh thyme
1/2 t chopped fresh rosemary
1 t chopped fresh sage
1/4 c unsalted butter
zest of 1 orange
1 T OJ concentrate
1/2 t orange oil
Turkey:
1 onion, chopped
3 carrots, chopped
2 ribs celery, chopped
1 T kosher salt
2 T brown sugar
2 t cracked black pepper
18 # turkey

Steps:

  • Preheat oven 350 convection oven (check oven book for their suggestion) To prepare glaze, place the wine, garlic, and shallot in a saucepan over high heat and cook until about 1 cup of liquid remains. Add the honey, chopped herbs, butter, orange zest, concentrate, and oil and cook until the mixture comes to a boil. Remove from the heat and cool. To prepare turkey, place the vegetables on a heavy sheet pan. Combine the salt, sugar and black pepper in a small bowl. Rub on the turkey and place turkey on the vegetables. Place in the oven and roast until the internal temperature reaches 155. Remove from oven and let rest 30 minutes.
