RISOTTO WITH SPICY SAUSAGE image

Number Of Ingredients 7

1 pound spicy Italian sausage, casings removed
1 1/2 cups chopped onion
2 large garlic cloves, chopped
1 1/4 cups Arborio or Carnaroli rice
4 to 5 cups chicken broth
1 1/4 cups grated Parmigiano
1/2 cup chopped fresh Italian parsley

Steps:

  • Saute sausage, onion and garlic in 6 qt stock pot, breaking up the sausage with a spoon (about 6 minutes). Add rice and stir 1 minute. Add 4 cups broth, reduce heat and simmer until broth is absorbed, stirring frequently. Takes about 30 minutes Stir in 1/4 cup cheese and 1/4 cup parsley. Serve with remaining parsley and cheese.
