Rigatoni Caprese image

Number Of Ingredients 6

1 pound rigatoni
3 tablespoons olive oil
1 large tomato coarsely chopped
2 to 3 cups fresh spinach
salt and pepper to taste
1/2 pound grated mozzarella cheese

Steps:

  • Preheat oven to 350 degrees. Cook pasta according to package directions. In a large, heavy skillet, heat the oil over medium-high heat. Add tomato and spinach and sauté until spinach wilts, about 3-5 minutes. When pasta is cooked, drain and add to skillet. Blend thoroughly with the tomato and spinach, about 30 seconds. Season to taste with salt and pepper. Place in a baking dish, sprinkle with mozzarella and bake until the cheese melts, about 10-12 minutes.
