Rich Mashed Potatoes image

The cheese in this really enhances the flavor of the potatoes. Sometimes I don't bother to peel the potatoes. It not only saves time and effort, but it adds a bit of texture and nutrition.

3 1/2 lb potatoes, peeled
1 c cheddar cheese, shredded
1/2 c butter
1 tsp garlic powder
2 tsp salt
1/4 tsp pepper
1 1/2 c sour cream
chives, chopped

Steps:

  • 1. Cook potatoes in water to cover 25 -30 minutes until tender.
  • 2. While still hot, mash roughly with potato masher and add cheese. Continue to mash until cheese is well incorporated.
  • 3. Mash in butter, garlic powder, salt, and pepper.
  • 4. Finally, add sour cream and mash or whip. If you desire your potatoes a bit thinner, add cream or milk until desired consistency. Reheat if necessary.
  • 5. Serve with extra butter and a generous sprinkling of chives.
