1 onion, chopped
1/2 cup chopped green peppers
2 slices OSCAR MAYER Bacon, cut into 1-inch pieces
2 slices OSCAR MAYER Smoked Ham, chopped
3 cloves garlic, minced
2 cups water
1 can (15 oz.) pigeon peas, undrained
1/2 cup tomato sauce
1 pkt. seasoning with coriander and annatto
1/4 tsp. ground black pepper
2 cups long-grain white rice, uncooked

Steps:

  • Cook and stir first 5 ingredients in large skillet on medium-high heat 5 min. or until vegetables are crisp-tender.
  • Add water, peas, tomato sauce and seasonings; stir. Bring to boil.
  • Stir in rice; cover. Simmer on medium-low heat 20 min. or until rice is tender.
