RICE-SPINACH CASSEROLE image

Number Of Ingredients 6

6 slices bacon, fried crisp and crumbled
2 cups rice- 2 bunches spinach, coarsely chopped
1 chopped onion
4 cups chicken broth
4 tbl butter or bacon fat
Saute rice and onion until browned. Add broth and pour into casserole.

Steps:

  • Bake 20 minutes or until tender at 350 degrees.Toss with spinach and return to oven only to heat through. Toss with bacon last. (I cook bacon first, then add to pot the rice and onion. Cooks faster if you let it stand 2 hours or so in broth)
