Rice Salad with fava beans and pistachios image

Number Of Ingredients 8

1/2 cup wild rice
1 cup basmati rice
1 cup fava beans
1/2 cup fresh chopped dill
1/2 cup Italian parsley
1/2 cups pistachios
1/4 cup olive oil
2 teaspoons lemon zest

Steps:

  • Cook wild rice in boiling water with salt until grains split, 35-40 min. drain and cool
  • combine basmati rice and zest of 1 lime in 1.5 cups water, salt, bring to boil. Reduce heat, cover and simmer 15 minutes, remove from heat, fluff with fork, let sit until water is absorbed., cool
  • Cook fresh whole fava beans in salted water for 5 minutes, drain, transfer to icewater, drain and peel.
