1 cup rice
1 cup chopped celery
1/2 cup chopped onion
1/2 cup canned peas
1/2 cup canned corn
1/4 cup oil
1 tablespoon soy sauce
1 teaspoon curry powder
1 teaspoon sugar
1 teaspoon vinegar
1/3 cup almonds, chopped

Steps:

  • Cook 1 cup of rice in slightly salted water.
  • Cool.
  • Add the vegetables.
  • Mix together and add the dressing ingredients.
  • Mix and refrigerate for at least 1 hour.
  • Just before serving, add almonds.
