RIBBON ZUCCHINI WITH YELLOW WAX BEANS image

Number Of Ingredients 7

1 LB small zucchini (4 to 6)
1 tbsp olive oil
1 small yellow onion finely chopped
4 oz waxed yellow beans cut into 1/2" lengths
2 plum tomatoes, seeded and cut into 1/4 inch dice
1 tbsp freshly chopped chives
salt and pepper

Steps:

  • slice zukes intl long ribbons: cutting lengthwise, slice the sides from aroudn teh seedy core of each squash; discard core. Cut each side into long, thin strips Heat large saute pan over med-high heat and add olive oil. Add onion and yellow beans and saute until just beginning to brown, about 2 minutes. Add zukes and 1/2 cup water and stir to combine. Reduce heat to medium, cover and cook until zukes are tender and flexible, about 5 minutes. Stir in the tomato, chives, salt and pepper and remove from heat.
