8 cups chopped rhubarb
3 cups diced onions
2 cups white vinegar
2 1/2 cups brown sugar
1 teaspoon cinnamon
1 teaspoon allspice
3 garlic cloves, minced
1 teaspoon salt
1 teaspoon fresh ground pepper

Steps:

  • Combine all ingredients in a large saucepan.
  • Bring to a boil.
  • Reduce to low heat and let simmer until well thickened.
  • Let cool and refrigerate.
