2 Tbsp. cornstarch
1/4 cup water
4 cups chopped rhubarb
1-3/4 cups granulated sugar, divided
1 tsp. vanilla
1-1/2 cups old-fashioned or quick-cooking oats
1-1/2 cups flour
1 cup packed brown sugar
1/2 cup chopped pecans
1 cup butter, softened
2 pkg. (8 oz. each) PHILADELPHIA Neufchatel Cheese, softened
2 eggs

Steps:

  • Heat oven to 350ºF.
  • Line 13x9-inch pan with foil, with ends of foil extending over sides; spray with cooking spray. Mix cornstarch and water until blended.
  • Bring rhubarb, 1-1/4 cups granulated sugar and vanilla to boil in medium saucepan on medium heat, stirring frequently; simmer on medium-low heat 5 min. or until rhubarb is softened, stirring occasionally.
  • Stir cornstarch mixture. Add to rhubarb mixture; cook and stir 1 to 2 min. or until thickened. Remove from heat.
  • Combine oats, flour, brown sugar and nuts in large bowl. Add butter; mix until well blended and crumbly. Press half the oat mixture onto bottom of prepared pan. Bake 10 min. Meanwhile, mix Neufchatel, eggs and remaining granulated sugar until blended.
  • Pour Neufchatel mixture over crust; top with rhubarb mixture and remaining oat mixture.
  • Bake 25 to 30 min. or until golden brown. Cool completely. Use foil handles to lift dessert from pan before cutting into bars.
