If you are a Reuben Sandwich lover, this is the casserole for you!!

Number Of Ingredients 9

Ingredients

2 c drained sauerkraut
1/4 tsp caraway seeds
1 tomato, cut in thin slices
5 Tbsp 1000 island dressing
3/4 lb thinly sliced corned beef or pastrami
4-5 slices swiss cheese or 1/2 cup shredded
2 slices deli rye bread processed into soft crumbs
2 Tbsp melted butter
2 Tbsp fresh parsley, chopped

Steps:

1. Put drained sauerkraut in a casserole dish. Sprinkle caraway seeds over the top.
2. Layer tomatoes, salad dressing, and meat over sauerkraut in that order.
3. Top with cheese. Toss bread crumbs in butter that has been melted and mixed with the parsley, and sprinkle on top of the casserole. Bake at 375 for 30 minutes.
