Red-Hot Cashew Brittle image

Found in the Rachel Ray magazine, fun idea for Valentine's treat or Christmas gift.

Number Of Ingredients 5

2 c sugar
1 c light corn syrup
1 1/2 tsp ground cinnamon
1 tsp red food coloring
2 1/2 c salted cashew halves

Steps:

  • 1. Butter a foil lined jelly roll pan. Combine sugar, syrup, and 1/2 c water in saucepan. Cook until candy thermometer inserted in syrup registers 300, approx. 10 minues
  • 2. Remove from the heat, stir in the cinnamon and food coloring. Stir in the cashews, then pour onto the prepared pan, spreading as thinly as possible. Let cool, about 45 minutes. Break into pieces.
