Number Of Ingredients 9

3½ cups water, divided
2 cups plain couscous
4 tsp tomato paste
2 tbsp olive oil
4 garlic cloves, finely chopped
1 tsp paprika
1 tsp caraway seeds, finely crushed
1 tsp harissa marinade reserved from Moroccan-Spiced Lamb
6 tbsp fresh lemon juice

Steps:

  • Bring 2½ cups water to boil in large saucepan. Mix in couscous. Cover, remove from heat, and let stand until couscous is tender and water is absorbed, about 8 minutes. Meanwhile, whisk ½ cup water and tomato paste in small bowl until blended and smooth. Heat oil in heavy large saucepan over medium heat. Add garlic and sauté until fragrant, about 1 minute. Add tomato paste mixture, paprika, caraway, and reserved harissa marinade. Bring to simmer. Reduce heat to low, cover, and simmer 5 minutes to blend flavors. Mix in lemon juice, remaining ½ cup water, and couscous. Toss to blend. Season to taste with salt and pepper. Transfer couscous to bowl and serve.
