Steps:
- 1. Mix softened cream cheese with cilantro and half of the monterey jack. Set aside. 2. Spread 1/3 of sauce on bottom of casserole(deep covered baker). Pour remaining sauce in a shallow dish. 3. Dip four tortillas into enchilada sauce and arrange over casserole dish. 4. Place a dollop of cream cheese mixture in six places, over the tortillas. 5. Place chicken on top of cream cheese and then a layer of onion. 6. Keep layering and end with chicken pouring the remainder sauce over the layers. 7. Top with remaining monterey jack cheese. 8. Microwave on high for 12-15 minutes. Let stand 10 minutes. Serve with cilantro sprigs.
