RED BEANS AND RICE WITH CHORIZO image

Number Of Ingredients 9

4 slices bacon, cut into 1 inch pieces
1 yellow onion, chopped
1 cup chopped celery
1 small green bell pepper, seeded and chopped
2 cloves garlic, minced
2 14.5 ounce cans kidney beans, undrained
1 package Chorizo sausage, sliced
2 cups cooked rice
2 tablespoons chopped fresh parsley

Steps:

  • Cook bacon in a medium skillet with the onion, celery, green pepper and garlic until golden. Transfer the mixture to a sauce pot and add the beans and chorizo. Reduce heat, cover and simmer 20-30 minutes. Cook rice according to package instructions. Ladle beans over rice and sprinkle with parsley.
