RED BEANS AND RICE image

my husband is a beans and rice lover, but like I've said before he is Cuban!!

Number Of Ingredients 10

1 lb dried red beans
1 1/2 lb smoked sausage cut into chunks, i fry mine in a little bit of bacon grease
1 ham hock or ham bone
1 clove fresh garlic,chopped
1 c onion chopped
1 tsp dried thyme
1 tsp freshly ground pepper
1/2 tsp sage
1/8 tsp cayenne pepper
salt to taste

Steps:

  • 1. Soak beans overnight in cold water. Drain and put the beans in a large pot or Dutch oven. Add fresh water to cover, along with the sausage and ham, onion, garlic, thyme, pepper, sage, and cayenne. Bring to boil over medium high heat.
  • 2. Reduce heat to medium low, cover and simmer until beans are tender, adding more water if necessary to keep them from drying out. This will take 2 to 3 hours. Add salt to taste.
  • 3. Discard ham bones. Remove about 1/4 cup of beans from mixture and mash; return to Dutch oven and stir. Simmer 15 more minutes.
  • 4. FOR RICE FOR SIX: 3 CUPS WHITE RICE SALT TO TASTE PUT RICE IN POT COVER WITH WATER JUST UNTIL WATER IS ABOUT A 1/2 INCH HIGHER THEN RICE. BRING TO BOIL STIR. BUT IT ON SIMMER WITH LID AND DON'T TOUCH OR LIFT LID FOR 20 MINUTES.
