RAVIOLI WITH PARMESAN, BUTTER & HERBS image

Number Of Ingredients 7

Coarse salt
1 pound fresh cheese or pumpkin ravioli (or other)
6 tbs unsalted butter, room temperature
½ cup freshly grated Parmesan
2 tablespoons chopped mixed fresh herbs such as chives, oregano, marjoram, chervil, parsley, basil or tarragon
Freshly ground black pepper
Fresh lemon juice, to taste

Steps:

  • Bring large pot of water to boil, add ¼ cup salt and cook, stirring frequently, until al dente, 5 to 10 minutes depending on the ravioli (be careful, not good if smooshy). Meanwhile, combine other ingredients in a large bowl. Drain ravioli well and add to bowl. Toss gently until butter is melted and ingredients are well mixed. Add salt, pepper & lemon juice to taste and serve immediately.
