Ranch Beans image

Living in southern Arizona for the winter inspires me to find local recipes to enjoy. When you add the chili powder, make sure you use actual ground chiles, not the chili powder in the little jar from the grocery store. That kind includes a bunch of fillers, etc.

Number Of Ingredients 6

1 pound(s) pinto beans, dried
1 medium onion, diced
2 clove(s) garlic, minced
4 ounce(s) salt pork, or bacon
1/2 cup(s) pure chili powder
salt and pepper, to taste

Steps:

  • Wash and sort beans. Put in large pot, cover with water and let soak overnight.
  • Drain, add fresh water to cover. Add other ingredients, except for the salt and pepper.
  • Bring to a boil, then reduce to a simmer for 2-3 hours or until beans are tender. Scoop off any foam that forms on top.
  • Add salt and pepper to taste.
