Rakott Krumpli (Hungarian Farmer's Wife Special) image

Number Of Ingredients 9

6 Potatoes, cooked in their skins
6 Hard boiled eggs
5 tablespoons Melted Butter
4 tablespoons Fried and crumbled bacon
2 teaspoons Salt
1 Egg yolk
1 pint Sour cream
1 pound Smoked sausage (I use Kielbasa), cooked, and sliced
1 dash Paprika (I used smoked Spanish style)

Steps:

  • Peel and slice potatoes. Slice hard boiled eggs.
  • Brush 3 qt. baking dish with some of the melted butter.
  • Place 1/3 of the sliced potatoes on the bottom of the baking dish. Sprinkle with salt, then 1/2 of the crumbled bacon. Place 1/2 of the sliced eggs on top, and dribble on some of the melted butter.
  • Mix the sour cream and egg yolk together until well blended. Spread 1/2 of the sour cream mixture over the eggs. Place 1/2 of the sausage slices on top of the sour cream, top with 1/3 of the potatoes, lightly salted, remaining bacon, eggs, melted butter, sausage, and then remaining potatoes. Top with the remaining sour cream to cover the surface. Sprinkle paprika evenly over top.
  • Bake at 350 degrees F for 30 minutes, uncovered. If desired, dish may be refrigerated unbaked for up to 2 days, then returned to room temperature and baked for about 40 minutes.
