Raisin Filled Cookies image

Received this recipe from my Grandma one of the first her and I made together. When making these she didn't use a mixer but I do.

Number Of Ingredients 17

1 cup(s) sugar
1/2 cup(s) butter or margarine softened
1 - egg
1/2 cup(s) milk
3 1/2 cup(s) flour
1 teaspoon(s) baking soda
2 teaspoon(s) baking powder
1/2 teaspoon(s) salt
1 teaspoon(s) vanilla
FILLING MIXTURE
1 cup(s) seedless raisins
1/2 cup(s) water or orange juice
1 teaspoon(s) lemon juice
1/2 cup(s) walnuts or pecans
1 cup(s) sugar
1/4 teaspoon(s) salt
1 1/2 cup(s) flour

Steps:

  • Directions for filling mixture: Combine all ingredients and cook. Stirring over medium heat until thick. Cool before using.
  • Blend sugar, butter and eggs until smooth.
  • Add dry ingredients which have been sifted together, alternate with the milk.
  • Mix thoroughly and roll out thinly on floured board cut into rounds with a 3" cookie cutter. I take my thumb and make an indent. Put 1 teas filling on each cookie and place another round on top. Crimp edges together. Make small vents.
  • Bake in 375 degree oven about 12 to 15 minutes or until lightly browned.
