GRANDMA'S RAISIN FILLED COOKIES

Grandma's Raisin Filled Cookies image

My Grandmother always had these on hand whenever we would come to visit. We always gobbled them up. I never truly appreciated them tho, until I finally was given the recipe and realized the TIME that went into them. I recommend making the filling one day and the cookies the next.. just saves you that much time. I also like to just underbake a hair... I'll probably be strung and hung for sharing her recipe..:)

RAISIN FILLED COOKIES RECIPE - (4.6/5)

Raisin Filled Cookies Recipe - (4.6/5) image

Provided by davidv

Number Of Ingredients 18

Raisin Filling:
1-1/4 cup dark raisins
1/3 cup walnuts, finely chopped
1/2 tsp cinnamon
1-1/2 Tbsp sugar
1/3 cup apple jelly
Cookie Dough:
2-1/3 cups all-purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 oz unsalted butter, softened
2 oz cream cheese, softened
1/2 cup brown sugar, packed
1/2 cup sugar
1 egg
1 Tbsp vanilla extract
1-1/2 Tbsp milk

Steps:

  • To prepare the filling, add the filling ingredients to a medium-size bowl and mix with a spatula until evenly incorporated. Place the mixture into an airtight container and refrigerate for 8 hours, or overnight. To prepare the cookie dough, combine the flour, baking powder, baking soda, and salt. Set aside. With a stand or hand mixer, cream the butter, cream cheese, and both sugars. Add the egg and vanilla and mix until incorporated. Add the flour mixture in two batches, alternating with the milk. Remove the dough from mixing bowl and form it into a disc. Wrap the dough in plastic wrap and refrigerate for 6 hours, or overnight. To bake the cookies, preheat the oven to 350°F. Line two cookie sheets with parchment paper and set aside. On a lightly floured surface, roll out the now-chilled dough until it's 1/8" thick. Lightly flour two round cookie cutters, one 2-1/2" and one 3". Press them into the dough to shape your cookies. Place the 2-1/2" cut circles onto the prepared cookie sheets. Spoon one heaping Tbsp of the filling and place it in the middle of each circle. With a little bit of water, lightly wet the edges of the cookie with your fingers. Top each with a 3" round cutout. Seal the edges together, pressing with your fingers and cut a small slit right over the filling of each cookie. Bake for 14-16 minutes, or until lightly browned. Move the cookies to cooling racks.

RAISIN-CRANBERRY FILLED COOKIES

RAISIN-CRANBERRY FILLED COOKIES image

Categories     Cookies     Fruit     Dessert     Bake

Yield Makes approx 48 cookies

Number Of Ingredients 16

Dough Recipe:
1 cup white sugar
1 cup light brown sugar
1 cup butter
3 large eggs
2 tbls. water
1 tsp. vanilla
3 1/2 cups flour
1 tsp. baking powder
Filling Recipe:
2 cups raisins
1 cup dried cranberries
1 3/4 cups water
1 1/3 cups sugar
1 tbls. flour
4 tsp. grated orange peel

Steps:

  • Dough: At medium speed, cream white and brown sugar w/ butter about 5 minutes, scraping sides of bowl. In a separate bowl whisk until well blended, eggs, water, and vanilla. Add egg mixture to sugar mixture, mix at medium speed until blended. In separate bowl combine flour & baking powder. With mixer at low speed, add flour mixture in thirds until just blended, scraping sides & bottom of bowl as needed. Place dough on plastic wrap and mold into loaf shape. Place in freezer and for 45- 60 minutes. When filling has cooled cut off a piece of dough, not more than 1/4 of the loaf. Place on floured surface. Put the rest of the dough in refrigerator.(not freezer) Flour dough on both sides, pat lightly into a thick circle. Roll with floured rolling pin to 1/8 to 1/4 inch thickness. Cut into 3 inch circles. Put a teaspoon of filling in center of circle. Fold cookie gently over filling, sealing edge with your finger...back and forth until cookie is sealed. I found that putting the cookie in my left hand and crimping edge with my right hand worked well. Be careful not to heat the dough up too much, it needs to be cold. Place cookies on cookie sheet about 1 1/2 inches apart. Repeat procedure with the rest of the dough, 1/4 at a time. Bake in 350 degree for 7 minutes. Turn cookie sheets & rotate sheets on oven racks, top to bottom. Bake another 7 minutes. Keep checking cookies and bake until lightly browned on bottom and sand colored on top. Cool on racks. Keep dough chilled while baking filled cookies. Filling: Combine raisins, cranberries and water in bowl of food processor. Whiz, intermittently, until fruits are medium to finely chopped.(not too much...you don't want mush!) Put in medium size, heavy saucepan. Add sugar, flour & orange peel. Bring to boil, lower heat & simmer until nicely thickened. (this will also thicken some as it cools)Cool mixture.

DELICIOUS RAISIN-FILLED COOKIES

Delicious Raisin-Filled Cookies image

These cookies are my husband's favorite and are a must-have on four-wheeling trips because his grandma used to bring an ice-cream bucket full of them when they went out for a ride in the hills. I've tried other recipes I found on line, and they weren't what he remembered, so I finally tracked down Grandmas recipe and it's great. The vinegar in the filling gives it a tang rather than syrupy sweetness, and the cookie crisps up nicely.

1 tablespoon lemon zest
3 eggs
1 cup milk
1 cup vegetable oil
1 lemon
⅓ cup confectioners' sugar for decoration

Steps:

  • To Make Filling: Boil prunes until plump. Put raisins in pan, cover with water and heat until water steams. Strain and add 1/2 cup of sugar to raisins, mix well and heat again until almost dry. Remove from heat and set aside. Pit the cooked prunes, if not already pitted, chop and add to raisins. Add chopped nuts, if desired. Set fruit mix aside overnight.
  • The next day make the dough. In large bowl, mix together the flour, baking soda, sugar and salt. Make a well in the center. Add the eggs, milk, grated lemon rind and oil and mix to form dough. Knead the dough to the consistency for rolling.
  • Divide the dough into 6 parts. Roll each part into a rectangle of 1/8 inch thickness. Put 1/6 of the fruit mix onto the dough rectangle and spread evenly.
  • Fold the dough lengthwise into the center. Fold the other side in slightly past center, and press seam lightly. Pinch ends to close. Lift the loaf with a spatula and place on lightly greased cookie sheet with seam under.
  • Bake in 400 degree F (205 degrees C) oven for 18 - 20 minutes (top should be lightly brown). Allow to cool then cut crosswise slices about 1 inch thick.
  • To Make Glaze: Use juice of 1 lemon and enough confectioners' sugar to obtain consistency for brushing top of cookie. Drop sprinkles onto glaze and allow glaze to set. Enjoy!

RAISIN FILLED COOKIES

Raisin Filled Cookies image

These are just fabulous cookies. Moist and tender and just delicious. This is a great recipe for raisin lovers. They remind me of the cookies my Father used to buy in a little bakery near where he worked. I have tried many raisin filled cookie recipes, but this is the "Bomb". You'll just love them.

Time 2h10m

Number Of Ingredients 17

1 c brown sugar
1 c sugar
1 c butter, softened
3 eggs
2 Tbsp vanilla
5 c flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp nutmeg
1/2 tsp salt
3 Tbsp buttermilk
RAISIN FILLING:
1 Tbsp cornstarch
3 Tbsp flour
1 c packed brown sugar
2 c boiling water
1 1/2 c seedless raisins

Steps:

  • 1. First make the filling so it can cool. Combine in a saucepan the cornstarch, flour and brown sugar. Add the boiling water, stirring constantly to make a smooth mixture. Add the raisins and stir, cooking until mixture comes to a boil and thickens, about 3 minutes. Set aside to cool.
  • 2. Make the dough. In a large bowl, cream the both sugars with the butter. Add the eggs, one at a time, beating well after each addition. Add the vanilla and mix it in. Combine the flour, baking powder, baking soda, nutmeg and salt. Add the dry ingredients alternately with the buttermilk into the creamed mixture. Mix well. Wrap in plastic wrap and chill for at least an hour or so. This will make it easier to roll out and cut the dough.
  • 3. On a floured surface, roll the dough out and cut into 3" circles. I put the circles on an ungreased cookie sheet to fill them so I don't have to move them once they are filled. Place 2 teaspoons of raisin filling on half the circles and cover with the another circle. Seal the edges really well to keep the filling from baking out and cut a slit in the top circle for the steam to escape. Bake at 350 degrees for 10-13 minutes or until lightly browned.

Received this recipe from my Grandma one of the first her and I made together. When making these she didn't use a mixer but I do.
