Rachael Rays Special Rice. image

I have made this several times and its always a hit. I don't always have currants and I don't miss them in the final dish. The directions are for stove top but I like it better in a rice cooker. I serve this with lemon chicken and a salad. Enjoy!

Number Of Ingredients 9

3 cup(s) water
1 1/2 cup(s) white rice
2 tablespoon(s) butter
1/4 cup(s) golden raisins
2 tablespoon(s) currants
1 teaspoon(s) lemon zest
1 teaspoon(s) cumin seeds
1 teaspoon(s) chopped chives
3 ounce(s) toasted sliced almonds

Steps:

  • Bring water to a boil.
  • Add butter, rice, cumin, lemon zest, raisins, currants.
  • Bring back to a full boil. Cover and reduce heat to a simmer. Simmer for 20 minutes.
  • Remove from heat and add chives. Fluff with fork. Put on serving platter. Sprinkle with almonds. Serve and enjoy.
