QUINOA MUSHROOM SALAD image

Number Of Ingredients 15

1 lb. quinoa
40 oz. vegetable stock
3 bay leaf
pinch cayenne
1T. turmeric
1T. curry powder
1 large onion
3 shallots
1 t. each salt & pepper
for the mushrooms:
2 lbs. mixed mushrooms
2T. thyme
3 T. balsamic vinegar
olive oil
salt & pepper

Steps:

  • Mince onions and saute in olive oil. Add spices. Add quinoa and stir to coat with oil. Add stock, bay and s&p. Bring to boil. Reduce heat, cover and cook until liquid is absorbed. Chop mushrooms. Saute in oil. Add thyme and s&p. Finish with vinegar. Mix mushrooms into quinoa. Serve warm or at room temperature.
