Quick Skillet Bread image

I just tried this recipe yesterday and it was great! Its from a food friend named Knoxcop. She is a master baker, so I knew the recipe would be delicious! This bread would be perfect to use with biscuits and gravy! You can add any topping you like! I added crispy fried smoked pork pieces!

Number Of Ingredients 6

1 Tbsp oil + 1 tbls. butter or bacon fat
2 c flour
2 1/2 tsp baking soda
1 tsp salt
1 1/2 c buttermilk-don't use lowfat-you're needing high fat here
about 1 c of toppings-optional

Steps:

  • 1. In a heavy 12 inch skillet (prefer non stick) heat 1 tablespoon of your fat.
  • 2. Sift flour, soda and salt together.
  • 3. Quickly stir in buttermilk until just moistened.
  • 4. Place batter into the melted fat, spreading batter across pan.
  • 5. Place lid onto skillet.
  • 6. Cook bread, covered, over low to med heat for about 10-12 minutes.
  • 7. Lift one side of the bread gently, with large turner, and flip. But add remaining Tbls. of oil to skillet before the flip.
  • 8. This is when you add your toppings if desired!
  • 9. Continue to cook other side for 10-12 minutes,
  • 10. Cut into wedges and serve.
