quick potato mushroom and black bean burrito image

2/3 cup mexican salsa verde divided
4 tablespoon chopped cilantro
2 tablespoon vegetable oil
8 ounces grated potato (sweet or reg)
1 teaspoon kosher salt
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper
8 ounces sliced button mushrooms
1/2 red onion thinly sliced
16 ounce black beans can rinsed
5 ounces baby spinach
1/2 lime
4 flour tortillas
1/3 cup sour cream
3/4 cup grated cheddar
1 avocado sliced

Steps:

  • 1. heat 1 T oil of med high heat in large skillet. Add potato and cook until softened about 3 min. Stir in 1/2 t salt, 1/2 t cumin and 1/4 t cayenne, then transfer to large bow..
  • 2. Heat 1 T oil in skillet, add mushrooms and cook stirring until mushrooms begin to brown and release moisture, about 3 min. Add onion and remaining 1/2 t salt, 1/2 t cumin and 1/4 t cayenne, cook stirring until mushrooms and onions are tender and cooked through about 3 min. Stir in beans and spinach; cook until warm about 1 min more. Transfer mushroom mixture to bowl with potatoes. Squeeze lime over and stir to combine.
  • 3. mix sour cream, 1/3 cup of salsa verde and 2 T cilantro in small bowl.
