A quick and easy Louisiana style chicken gumbo. Enjoy over rice. Cooking time does not include cooking time for chicken or rice.

- In a large heavy saucepan over medium heat, melt butter. Add onion, garlic, bell pepper and celery. Saute for 5 minutes or until softened.
- Blend in flour and cook, stirring for approx. 3 minutes. Slowly stir in tomatoes and broth and then add hot pepper sauce.
- Bring to a boil until mixture thickens, about 3 minutes. Add thawed okra and return mixture to a boil - then reduce heat and simmer another 6 minutes. Add cooked chicken and stir until warmed; stirring occasionally. Stir in lemon juice and mix well -- serve over rice.
