QUAKER BRAN MUFFINS image

Yield 12 large muffins

Number Of Ingredients 11

1/4 cup shortening
1/2 cup brown sugar firmly packed
1/4 cup molasses
2 eggs unbeaten
1 cup milk
1 cup all purpose flour
1-1/2 tsp baking powder
1/2 tsp baking soda
3/4 tsp salt
1-1/2 cups Quaker natural wheat bran
1/2 cup raisins (optional)

Steps:

  • Cream shortening & sugar together. Add molasses & eggs and beat well together. Add milk and then bran (alternate to avoid splashing). Combine flour, salt, baking soda, and baking powder. Add to liquid ingredients. Add raisins if desired. Place in greased muffin pans (I used cupcake liners). Bake at 400F for 18-20 minutes.
