PUMPKIN FLAX QUICK BREAD image

•1/2 cup Water
•1/2 cup Brown Flaxseeds Meal
•1 1/2 cups Turbinado Sugar
•1 cup Pumpkin Puree
•1/2 cup Applesauce
•1 cup White Flour, Unbleached
•1 tsp Baking Soda
•1 tsp Cinnamon, Saigon (Premium)
•3/4 tsp Salt
•1/2 tsp Baking Powder
•1/2 tsp Nutmeg
•1/4 tsp Cloves
•1 cup Whole Wheat Flour

Steps:

  • Preheat oven to 350°F. Lightly grease one 9X5-inch loaf pan or muffin pan. 2. Whisk together the flax and water. Mix in sugar, pumpkin and applesauce. 3. In a large bowl, stir together dry ingredients. Add flour mixture to pumpkin mixture; stir until smooth. 4. Pour batter into prepared pan. Bake loaf for 65-70 minutes or muffins 15-20 minutes, until a toothpick inserted comes out clean. Makes 12 servings.
