Pumpkin Delight image

When any holiday is here, my MIL absolutely refuses to let me in her house with having this. She literally hoards this stuff. It is just too funny to watch her. Started making this 20 years ago when my son went to his first girl friends house for thanksgiving and ate it there. He loved it so much he came home with the recipe. Too funny. Everyone loves this stuff it is so addicting.

Number Of Ingredients 11

1 - box yellow cake mix
1 - egg
1 - stick butter, melted
TOPPING
1 - stick butter, melted
1 - can, pumpkin puree (15 oz)
8 ounce(s) cream cheese, room temperature
2 - eggs
4 cup(s) powdered sugar
- dash of allspice, and pumpkin spice seasonings
1 teaspoon(s) vanilla

Steps:

  • Mix together, cake mix and egg and melted butter. Mixture will be like a cookie dough. Press evenly into a 12x9 pan. (At this point, pecans can be added if you desire) Just sprinkle down on top of dough and press lightly.
  • TOPPING: Beat cream cheese till light and fluffy. Add pureed pumpkin and mix till there are no lumps. Add eggs, vanilla and butter and mix well. Slowly add the powdered sugar.
  • Once it's all mixed in, pour evenly on top of dough. Bake in a preheated oven of 350ยบ for 45 to 50 minutes. It will still be slightly jiggly in the middle. Don't overbake. Take out and cool completely.
  • Much better if this can be refrigerated for a couple of hours.
