PUMPKIN CAKE IN A JAR II (NEW VERSION) image

Yield 6 1/2 pint jars

Number Of Ingredients 12

1-1/4 cups cake flour
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon ground cloves
1 teaspoon allspice
1 teaspoon salt
3 liquid ounces vegetable oil
2 tablespoons walnut oil
1/4 cup light brown sugar
2 large eggs
1 cup canned unsweetened pumpkin
1/2 cup coarsely chopped toasted walnuts

Steps:

  • Preheat the oven to 350 degrees. Grease six 1/2-pint jars. Combine the cake flour, soda, spices, and salt. In a separate mixing bowl, combine the oils, brown sugar and eggs. Beat for about two to three minutes until the mixture is smooth. Add in the pumpkin. Add in the flour mixture and beat until the flour is completely blended with the oils. Add in the walnuts. Bake for about 30 minutes. Makes six 1/2-pint jars.
