Pumpkin Bread image

This recipe came from a friend of mine, that I tweaked to my liking...it's always moist and delicious.. I hope you give this one a try... Enjoy! My photos

Number Of Ingredients 15

1 (15 ounce) can pumpkin puree
4 eggs
1 c vegetable oil
2/3 c water
2 c sugar
1 c brown sugar
1 1/2 tsp pure vanilla extract
3 1/2 c flour ( i use unbleached )
2 tsp baking soda
1 1/2 tsp salt
1 tsp ground nutmeg
1 1/2 tsp ground cinnamon
1/2 tsp ground cloves
1/2 tsp ground ginger
1 c chopped walnuts or pecans...i made one with and one without

Steps:

  • 1. Preheat oven to 350 degree F. Grease and flour 2 large bread pans. In a large bowl, mix pumpkin, oil, water, sugars until well blended. In another bowl whisk all dry ingredients. Now stir the dry ingredients into the wet. Do not over mix. If using nuts; gently stir in now. Pour batter into prepared pans; bake for 55 to 70 minutes or until pick comes out clean. ( After 55 minutes, I keep checking them every 5 minutes. ) Enjoy this delicious bread. I have also used this recipe for a bundt cake or muffins.
