Pumpkin Apple Streusel Muffins image

My kids and husband love this recipe. These muffins are good with breakfast or an afternoon snack!

Number Of Ingredients 14

2 1/2 cup(s) flour
2 cup(s) sugar
1 teaspoon(s) baking soda
1 tablespoon(s) pumpkin pie spices
1/2 teaspoon(s) salt
2 - eggs, slightly beaten
1 cup(s) canned pumpkin
1/4 cup(s) vegetable oil
2 cup(s) peeled, cored and finely chopped Granny Smith apples (about 2 large apples)
- TOPPING
1/4 cup(s) sugar
2 tablespoon(s) flour
1/4 teaspoon(s) cinnamon
4 teaspoon(s) margarine

Steps:

  • Preheat oven to 350 degrees. Line muffin tins with paper liners.
  • In large bowl, combine flour, sugar, baking soda, pumpkin pie spice, and salt.
  • In medium bowl, combine eggs, pumpkin, oil and apples.
  • Add pumpkin mixture to flour mixture, stir just to moistened.
  • Spoon batter into lined muffin cups 3/4 full.
  • TOPPING: In small bowl, combine topping ingredients, mixing with fork until blended.
  • Sprinkle evenly over muffins.
  • Bake at 350 degrees 35 minutes or until done.
