What better way to celebrate fall than with delicious muffins that combine the wonderful texture of apples with the warm taste of pumpkin. A simple streusel topping gives them a little something extra.

2 ½ cups all-purpose flour
2 cups white sugar
1 tablespoon pumpkin pie spice
1 teaspoon baking soda
½ teaspoon salt
2 eggs, lightly beaten
1 cup canned pumpkin puree
½ cup vegetable oil
2 cups peeled, cored and chopped apple
2 tablespoons all-purpose flour
¼ cup white sugar
½ teaspoon ground cinnamon
4 teaspoons butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease 18 muffin cups or use paper liners.
  • In a large bowl, sift together 2 1/2 cups all-purpose flour, 2 cups sugar, pumpkin pie spice, baking soda and salt. In a separate bowl, mix together eggs, pumpkin and oil. Add pumpkin mixture to flour mixture; stirring just to moisten. Fold in apples. Spoon batter into prepared muffin cups.
  • In a small bowl, mix together 2 tablespoons flour, 1/4 cup sugar and 1/2 teaspoon cinnamon. Cut in butter until mixture resembles coarse crumbs. Sprinkle topping evenly over muffin batter.
  • Bake in preheated oven for 35 to 40 minutes, or until a toothpick inserted into a muffin comes out clean.

1 tablespoon pumpkin pie spice

1/2 teaspoon salt

1 cup canned pumpkin
1/2 cup vegetable oil
2 cups finely chopped peeled apples
1/4 cup sugar
2 tablespoons all-purpose flour

Steps:

2 1/2 cups flour
2 cups sugar (I used 1 cup Splenda and 1 cup sugar)
1 Tbsp. Pumpkin pie spice (I used 1 tblsp cinnamon)
1 tsp baking soda
1/2 tsp salt
2 eggs, slightly beaten
1 cup solid pack pumpkin
1/2 cup veg. oil
2 cups peeled and finely dice apples (I used 1 large apple, a little less than 2 cups, but was plenty)
Streusel topping:
1 tbsp flour
1/4 cup sugar
1/2 tsp cinnamon
4 tbsp butter
Mix flour, sugar and cinnamon. Cut in butter until moistened.

Steps:

  • Combine dry ingredients, set aside. Combine eggs, pumpkin and oil, add dry ingredients until moistened. Stir in chopped apples. (Batter will be thick) Spoon batter into greased or lined muffin pans. Put streusel topping on top of muffin batter. Bake at 350 degrees for 35 mins. I made 21 muffins, could probably stretch it to make 24. Can freeze.

1 T cinnamon
8 t butter

  • In large bowl, combine the first five (dry) ingredients, set aside. In medium bowl, combine eggs, pumpkin, and oil. Add liquid ingredients to dry ingredients; stir just until moistened. Stir in apples Spoon batter into greased or paper lined muffins cups filling 3/4 full. Sprinkle Streusel Topping over batter. Bake in preheated oven 350 F for 35-40 minutes or until toothpick comes out clean. Streusel Topping: In small bowl, combine 4 T flour, 1/2 c sugar and 1 t cinnamon. Cut in 8 t butter, until mixture is crumbly.

2 cups flour, divided
1-1/2 cups sugar, divided
1 Tbsp. pumpkin pie spice
3/4 tsp. baking soda
1/4 tsp. salt
1 egg
1 cup canned pumpkin
1/3 cup oil
1 Granny Smith apple, peeled, chopped
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1/2 tsp. ground cinnamon
2 Tbsp. butter

Steps:

  • Heat oven to 350ºF.
  • Reserve 1/4 cup flour and 1/2 cup sugar. Mix remaining flour, sugar, pumpkin spice, baking soda and salt in large bowl until blended. Whisk egg, pumpkin and oil in medium bowl until blended; stir in apples. Add to combined dry ingredients; stir just until moistened. (Batter will be lumpy.)
  • Spoon batter into 12 muffin cups sprayed with cooking spray. Mix cream cheese and 1/4 cup of the reserved sugar until blended; spoon over muffin batter. Press lightly into batter with back of spoon.
  • Mix reserved flour, remaining reserved sugar and cinnamon in medium bowl. Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs; sprinkle over batter.
  • Bake 28 min. or until toothpick inserted in centers comes out clean. Cool in pan 5 min. Remove to wire rack; cool slightly.

One fall I had a mission to try out as many muffin recipes as I could find that I thought might be yummy. From the dozens I tried, here's one that made the cut.

Number Of Ingredients 9

2 1/2 cup(s) all purpose unbleached flour
2 cup(s) sugar
1 tablespoon(s) pumpkin pie spice
1/2 teaspoon(s) kosher or sea salt
2 large eggs, beaten
1 cup(s) pumpkin, canned
1/2 cup(s) canola oil
2 cup(s) granny smith apples, fine dice
1 - recipe streusel topping, below

Steps:

  • Whisk together the flour, sugar, pumpkin pie spice, nutmeg, and salt in a large bowl.
  • In a medium bowl beat together the pumpkin, eggs, and oil.
  • Pour the liquid ingredients into the dry mixture and using a wooden spoon, stir until just blended. Gently stir in the apples.
  • Scoop batter into muffin cups until about 2/3 full. Sprinkle streusel topping over the batter.
  • Bake at 350?F for about 30 minutes and check to see if done with the toothpick test.
  • Streusel Topping: In a small bowl combine 2 tablespoons flour, 1/4 cup sugar and 1/2 teaspoon cinnamon. Cut in 4 tablespoons unsalted butter until mixture is nice and crumbly.
