Puffed Cheese Omelette image

How to make Puffed Cheese Omelette

Number Of Ingredients 9

1/4 cup mascarpone
1 tbsp chopped chives
2 eggs, separated
2 tbsp cream
salt and pepper
30g butter
1 tbsp grated parmesan
1 tbsp grated cheddar
extra grated parmesan, to serve

Steps:

  • Combine the mascarpone and chives, set aside.
  • Place egg yolks, cream, salt and pepper in a bowl and whisk to combine.
  • Whisk the eggwhites until stiff peaks form and fold through the egg yolk mixture.
  • Melt the butter in a 20cm non-stick pan over medium heat.
  • Pour the egg mixture into the pan and cook for 5 mins.
  • Sprinkle with the parmesan and cheddar.
  • Spoon the mascarpone mixture onto one side of the omelette and carefully
  • fold over to enclose the filling. Cook a further 1-2 mins.
  • Sprinkle with extra parmesan to serve. Serves 2.
  • Lovely served with roasted tomatoes and wilted spinach.
