Boneless Prime Rib (12-15 pounds)
Olive Oil
1/4 c tri-color peppercorns
5 sprigs fresh thyme
3 sprigs fresh rosemary
1/2 c kosher salt
1/2 c minced garlic

Steps:

  • Preheat oven to 500. Cut rib eye in half and sear both sides 2-3 minutes per side in oil Place peppercorns in bag and use rolling pin to crush. Shred the leaves and mix with peppercorns and carlic. Pour olive oil rib eye and then add rub mix. roast 20 minutes and then reduce heat to 275-325. Roast should register 135. take out for 15 minutes until roast reaches 145.
