POTATO SALAD - KATHY VEIT image

Number Of Ingredients 8

2 pounds of red potatoes (about 6 medium)
1/4 cup finely chopped onion
1 tsp salt
1/4 tsp pepper
1/4 cup itallian prepared salad dressing
1/2 cup mayo or miracle whip
1/2 cup celery
2 hard boiled eggs

Steps:

  • Wash potatoes. Heat in salted water until cooked 30-35 minutes. Drain; cool, peel and cup potatoes into cubes. Combine in a bowl with onion. Sprinkle with salt, pepper, and salad dressing. Cover and refrigerate at least 2 hours. Just prior to serving, add mayo, toss and coat potatoes well. Stir in celery and top off with sliced eggs.
