Potato Rye Bread (Bread Machine) image

My daughter gave me her recipe for Potato Buns (Recipe #412701), and I modified it for a loaf of bread. I use my bread machine to mix the dough, but take it out after the dough cycle is complete and bake it in a regular loaf pan. Preparation time assumes 5 minute ingredient assembly, 1 hour 20 minutes for dough cycle, 30 minute rise time in loaf pan, and 30 minutes to bake at 375 degrees.

Number Of Ingredients 9

1 3/4 cups water
3 1/3 cups bread flour
2/3 cup rye flour
3 tablespoons olive oil
1 1/4 teaspoons salt
2 tablespoons sugar
1/4 cup wheat germ
1/4 cup potato flakes
2 teaspoons bread machine yeast

Steps:

  • Add the ingredients in order to bread machine pan.
  • Set on dough setting.
  • After machine finishes dough cycle, remove dough from bread machine pan and place in a loaf pan that has been sprayed with nonstick cooking spray.
  • Let rise in warm place for 30 minutes. I usually turn on the oven for a minute or two to warm it, turn off the oven, and place the loaf in the oven to rise.
  • Bake for 30 minutes at 375 degrees. Remove from pan immediately and put on cooling rack. Slice when cooled and place in bag.
